So, I love going out and ordering Edamame, but its usually just plain, steamed, salted with Lemon. Good! but not a lot of depth to it. going through the new famed Pinterest I found a cool recipe I thought looked good, so I modified it a bit to my own tastes and pleasure and Viola! here you go!
Spicy? Garlic Parmesan Edamame
What you need:
1 (16 oz) pkg frozen edamame in shell (I tried to find fresh but didn’t find any)
1/2 cup extra-virgin olive oil
2 tsp Pure Sesame Oil
4 cloves fresh garlic
1/2 cup-seasoned bread crumbs
1/2 cup freshly grated Parmesan cheese
Salt to taste & Black Pepper To Taste
(to add a touch of spice, put in 1-2 teaspoons of Chili garlic sauce)
In a small food processor, combine olive oil, sesame oil and garlic (chili garlic sauce if adding to recipe) Process until well-combined. Heat a wok over medium high heat. Add edamame and toss for a few minutes. Add garlic oil and saute for a minute or two, stirring constantly. Add breadcrumbs, Parmesan, and salt and toss until well coated. Serve immediately.
YUM!
