We love Asparagus in this house, and one night after eating some my husband proclaimed “I’m going to have asparagus pee tonight” which we then in turn had to explain to my curious 10 year old. So now, every time we eat asparagus, we get to hear about how his pee smelled *le sigh* having boys is wonderful! My apologies for talking about pee with my food, but there it is.
Prosciutto Wrapped Asparagus
What you need:
- 1 pound asparagus, trimmed from fibrous end
- 1 tablespoon olive oil
- Salt and Pepper to taste
- thin sliced prosciutto, halved lengthwise
- Freshly grated parmesan cheese
What you do:
Preheat the oven to 400 degrees F.
Snap the fibrous stem ends off of each asparagus and place on a baking sheet. Drizzle with a little olive oil, sprinkle with salt and pepper, and toss. Roast in the oven until the asparagus is tender, about 10 minutes. Cool completely.
Wrap each asparagus with 1 piece of prosciutto, leaving the tips exposed. Sprinkle with freshly grated parmesan and serve.

I make this sometimes. Asparagus and prosciutto are two of my very favourite foods, so this is heaven on a plate!

Or just prosciutto on it’s own! I’m not so keen on it cooked though, I think cooking it dries it out a bit and makes it lose its inherent prosciuttoness! Although having just said that, I now remember that at Christmas I made some dates, soaked in brandy, stuffed with stilton, wrapped in prosciutto and baked for a few minutes, and they were good, I guess the brandy helped!
I agree it does get dried out! Thats why I put it on the asparagus after!

Exactly how I make my asparagus, sometimes I add a squeeze of lemon juice. I absolutely love prosciutto and will give this a try!
A Touch of lemon juice would be a yummy thing!! Might try that next time
